Cheddar Cheese Manufacturer.

Realizing Very Quickly That They
Had To Find A Niche That Would
Distinguish Their Cheese From
The Generic Types Of Cheddar
Already Out There, They Started
Flavoring The Cheese.

Over A 5 Year Period The
Cooperative Expanded It's Product
Line To Include The 25 Flavors Of
Cheddar To 7 Flavors Of Fresh
Curd That We Still Make Today.

Palatine Cheese Distinguishes
Itself Today By Being The Only
Brand In The Northeast That Can
Boast This Many Flavors Of
Cheddar Cheese And Cheese
Curd.

The Spencer's Became Fully
Involved In The Plant In The Fall Of
2001, When The Cooperative
Decided To Change The Way They
Marketed Their Milk. Originally the
Spencer's Themselves Dairy
Farmers, Had A Joint Venture With
Some New Features. The Brand
Name "Palatine Cheese" Would
Remain And Would Continue To
Be Sold In Already Established
Wholesale Routes.  The On-Site
Retail Store Would Also Continue
But In A More Expanded Scale To
Include Not Only Palatine Cheese
But Many Other Dairy Products,
Bulk Food Items, And Specialty
Foods.

For Those Coming To Visit The
Store Or Plant, There Is A Soup
And Salad Bar For Self Service
Lunches. Ice Cream, Packaged
And Dipped, Is Provided By An
Old Name In Local Ice Cream, A
Business Which Is Now Owned By
A Group Of Local Dairyman.
